Hello everyone,

I’ve made a lot of dishes with chickpeas and sweet potatoes lately, so I thought it was time to put them together for a great one-pot meal! This dish is delicious – the sweet potatoes give the chickpea mixture a subtle sweetness that gives the dish a perfect balance.

I used canned chickpeas (garbanzo beans), which are great because they are fairly neutral-tasting and don’t impart any strong flavors. I added curry powder to give it a little more “pop”, but if you don’t like curry, you could substitute 1 teaspoon turmeric. One of the best combinations for rice and bread without going through tons of work or ingredients.

Experience wise, still you get a fantastic taste and mind-blowing flavor. This recipe can be made in less than 30 minutes, and it’s so easy to prepare even on your busy day dinner.

Directions

Step 1

In a pot add olive oil, diced onion, diced garlic, minced ginger sauté at medium heat for 2 minutes.

Step 2

Add All purpose flour mix well and continue to cook at medium heat for 1 minute.

Step 3

In the same pot add curry powder, paprika, ground turmeric, cayenne pepper mix well and continue to cook at medium heat for 1 minute.

Step 4

Add tomato puree, ground black pepper, salt continue to cook at medium heat for 1 minute.

Step 5

After add Diced sweet potato, Milk, Vegetable stock continue to cook at medium heat for 10 minutes.

Step 6

Add Chickpeas continue to cook at medium heat for 5 minutes.

Step 7

Serve immediately in a bowl with bread or rice.
